Gluten-free French Onion Soup

This soup originated in Paris and it is a classic. What makes this recipe even better is that it is gluten-free. This soup makes a very delicious meal. It is very tasty served with French bread and cheese. There is a gluten-free French bread mix that is available for making delicious gluten-free French bread. Caution, because some bouillon cubes may contain gluten, be sure to read the label. Gluten-free all-purpose flour mix is an excellent choice for making this tasty soup and may be easily purchased at Wal-Mart grocery.

This soup will make a very healthy addition to any lunch or dinner table. Excellent for serving in the winter because it is very comforting and warming. This soup will freeze well. It is good to make a large amount and any leftover may be frozen. This soup is excellent for serving with red wine for special occasions. This is a very easy to prepare recipe that will only take 1 hour to cook and serve. It is also a very inexpensive dish to make. This recipe will make enough for 8 servings.

Ingredients:

6 large onions, peeled and sliced

3 tablespoons of olive oil

3 tablespoons of gluten-free all-purpose flour mix. This mix can be purchased at Wal-Mart or ordered online.

8 cups of water

4 vegetable bouillion cubes-gluten-free. Caution some bouillon cubes may contain gluten, read the label.

2 fresh parsley sprigs, chopped

2 bay leaves

2 thyme sprigs, chopped

1 teaspoon of salt

1 teaspoon of black pepper

1/2 cup of white wine

1 cup of Cheddar cheese, grated or shredded

1/2 loaf of gluten-free French Bread. Gluten-free French bread mix may be purchased at specialty stores or ordered online.

Directions:

1. In a skillet, saute the onions in the olive oil over low to medium heat until soft.

2. Add the gluten-free flour mix and stir. Add the water and stir. Crumble the gluten-free bouillon cubes and add them to the pan

3. Add the chopped parsley, thyme and bay leaves. Add the salt and pepper and bring to a boil. Cover. Cook for 30 minutes. Add the white wine to the soup. Turn off the heat.

4. Place the soup in individual oven-proof soup bowls. Place one slice of the gluten-free French bread on top. Add the grated cheese.

5. Bake at 400 degrees F for 10 minutes until the cheese is golden brown. Serve and enjoy!
