French fries have a very bad reputation as being unhealthy and very bad for us, but they don’t have to be, with a little forward planning French fries can actually be a good well balanced part of yours our your children’s diet.I now only ever cook baked French fries and my family all love them – I have three different ways of cooking these fries – the first type I cook are Chunky French Fries, the second way are my Garlic French Fries and the third is an ‘all in one’ recipe for Oven Egg and Fries.

All of these recipes are low fat and very tasty, so there is no need to eliminate fries from your diet when you are trying to eat healthily.


Serves 2 people

2 large baking potatoes – leave the skin on and cut into nice fat chunky fries
1 tablespoon olive oil
salt and black pepper to taste

Pre-heat oven 220c, 425f or gas mark 7
Place all the ingredients in a bowl or plastic bag and mix well so that the fries  are well coated in the oil and seasoning.

Place the fries on a baking sheet and cook in the pre-heated oven in the oven for 20 – 30 minutes or until chips are cooked through and golden brown.


Serves 4 people

3 cloves garlic, crushed
1 tablespoon olive oil 
3 large baking potatoes 
1/2 teaspoon salt 
1 tablespoon finely chopped fresh parsley leaves 

Preheat the oven to 230c, 450f or gas mark 8. 
Heat the garlic and oil in a small saucepan over medium heat for 2 minutes. Strain the garlic from the oil; keep both the oil and the strained garlic to one side.

Cut the potatoes into thin strips. In a large bowl, toss the oil, potatoes and 1/2 teaspoon of salt.

Spread the fries in a single layer on a baking sheet. Bake until golden and crisp, about 35 minutes. 

Remove the potatoes and toss with the chopped parsley, reserved garlic, and additional salt, to taste.

Serve immediately.


Serves 2 people

450g floury potatoes

2 garlic cloves, sliced 
4 fresh rosemary sprigs
4 teaspoon olive oil 

Salt and pepper to taste
2 eggs 

Preheat the oven to 220c, 425f or gas mark 7.

Wash potatoes but do not peel, cut them into thick fries.

Put fries on a non-stick baking sheet and scatter over the garlic and stripped rosemary from the sprigs.

Drizzle with the oil, season well to taste and toss the fries to coat them well. 
Bake for 25-30 minutes until just cooked and golden, shaking the tray halfway through cooking.
Make two gaps in the fries and break an egg into each gap. Return to the oven for 3-5 minutes until the eggs are cooked to your liking. 

By baking your fries you can once again enjoy their great taste but in a healthy way.
